Lemon Bars

Crust:
  • 1 cup all-purpose flour
  • 1/3 cup butter, softened
  • 1/4 cup powdered sugar

Topping:
  • 1 cup sugar
  • 2 eggs
  • 2 Tbs. all-purpose flour
  • 2 Tbs. lemon juice
  • 1/2 tsp. lemon extract
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • Powdered sugar

Directions

Combine the crust ingredients and pat into an 8-inch square baking pan. Bake at 375 degrees for 15 minutes. Meanwhile, for topping, combine the sugar, eggs, flour, lemon juice, extract, baking powder and salt in a mixing bowl. Mix until frothy; pour over crust. Bake at 375 degrees for 18-22 minutes or until light golden brown. Dust with powdered sugar.
